25 Apr Announcements and Breakfast Sandwiches
An announcement about our summer plans and the breakfast sandwich currently fueling us as we make a few transitions.
Over the weekend, we announced to our newsletter subscriber’s the hard news that we will not be participating in a Saturday farmer’s market this summer season.
It was hard- emotional even- and we have looked at it from every angle trying to make it work. But, with our family at the stage it is, it did not make sense.
The Kokomo Farmer’s Market has been so good to us. It’s where we launched our business, shared our story, and met a lot of really, really great people. So many of the people we saw at the market week after week supported our dream and became friends.
It’s really hard to walk away from that… But, in a way, we are not. We are still going to be at the Market Store where Claire will be working one day each week and Kokomo is our community. We live here, our kids go to school here, we work here.
Our farm is here too and not going any where. You can always shop with us by lining up a time to meet in Russiaville at the farm or even in town. We will be at the Market Store in Kokomo where Claire will be working a few times each month. Market Wagon is a great place to shop too and our eggs will be at Waddell’s too!
We have a few fun things in the pipeline too. We want to explore a few event ideas and beef will be available around the holidays.
So, yes. A big piece of us is so sad. But, we are also excited. This will allow us to create and offer new and exciting things, build community and connection to the dinner table, but also keep balance within our family.
And, as a bonus, we will actually get to SHOP the Farmer’s Market…! Something we never had time for as a vendor chasing two toddlers. We love to get veggies, bake goods and coffee at the market just like you. We absolutely love the vendors whipping up breakfast sandwiches too. We love it so much we have created our own at home to get us through the off season and a normal, rushed weekday morning.
These sandwiches are so easy to make and sure beat their fast food inspiration. We have great sausage patties seasoned with the Biscuit Delight spice blend from This Old Farm, our processor, sandwiched between an English Muffin with some cheese (any kind you like, we went with good old American) and an egg disk.
The egg part intimidated me the most. How to you get scrambled eggs in such a perfect circle?
Well, start by making eggs like you would be scrambling them by cracking a few in a bowl and mixing them with a fork. Then, spread them in a baking dish and bake them. When cooked, you can use a biscuit cutter or even just the top of a glass to cut out perfect circles.
For meal preppers: These also can be wrapped up and frozen. A quick zap in the microwave and and on-the-go breakfast is served.
- Cooking spray
- 8 eggs
- ¾ cup milk
- salt and pepper
- 4 Sausage patties
- 4 slices of cheese
- 4 English muffins
- Preheat the oven to 375 degrees.
- Lightly coat an 8x8 baking dish in cooking spray.
- In a medium bowl add the cracked eggs, milk, salt and pepper and whisk until well combined. Add to baking dish. Bake for about 20 minutes or until set. Cut 4 egg discs using a biscuit cutter or the top of a glass.
- Cook sausage patties in a large skillet. If cheese is desired and eating right away, melt cheese onto sausage.
- Slice the English Muffins and toast if desired.
- Assemble sandwiches with sausage, cheese (if it has not already been added), egg. Enjoy right away!
- If freezing, take 4 paper towels and slightly dampen them, wringing out any excess water. Wrap each sandwich in a towel and then wax paper. Place in labeled freezer bag and eat within a month.
