28 Nov Bacon and Parmesan Green Beans
It may be to late for these to hit the menu for Thanksgiving, but they would be great for the rest of the Holiday season!
When we were dating, my mom asked Adam what Thanksgiving food he would wan to be sure was at the family Thanksgiving that was always at his growing up. She wanted to make him feel welcome and at home away from his own. His answer was green bean casserole.
My mom had never made green bean casserole. At least, not in recent memory. The home I grew up in had weird health food before weird health food was cool. There was not much Cream of Anything in our home.
But, my mom made it for the boy I loved. Even with the crunchy “onions” delighting my siblings. (A novelty!)
Today’s recipe is inspired by the classic, but different as today is Thanksgiving Day and, likely, your menu and shopping is complete. Instead, it is a good and simple way to enjoy green beans on a weeknight or maybe even for an up coming Holiday party.
But, also a reminder about how food creates memories and is such a way to show love to those new to your home and those who have been there for a long time. Today, at the table or in the kitchen, chat with your family members and guests about food memories and tell stories. Love one another with action, care and good food and give many thanks.

- 2 pounds fresh green beans, ends trimmed
- ½ pound bacon, diced (we used bacon ends, an option if purchasing a whole pig)
- 1 tablespoon butter
- 3 cloves garlic, minced
- 3 tablespoons parmesan cheese
- salt and pepper, to taste
- Bring a large pot of water to a boil and add the green beans. Cook until tender 5-8 minutes and drain. Immediately put the green beans in an ice bath. (This is called blanching and helps the beans keep their green color.)
- In a medium sized skillet cook the bacon until crisp. Remove and drain the fat.
- Add the butter and garlic to the skillet and sauté until tender.
- Add bacon, green beans, and parmesan cheese to the skillet and cook until heated through. Add salt and pepper to taste and serve right away.
