21 Jan Easy Freezer Egg Burritos
Whip up these freezer friendly burritos and be ready for the day!
One of my life saving hacks is meal planning. I make a handful of things each week to have ready to go. (See Instagram for our pickled red onions- great on salads and eggs- hard boiled eggs, etc.)
But there are sometimes that I take it to the next level and dedicate a day here and there to prepping a lot of something to fill the freezer with easy meals. I mainly do this with soups and crock pot meals. But also with breakfast burritos.
These breakfast burritos are a staple around here and I look forward to the day when our kids a little more capable to eat these on the go.
I also love that I can stuff them and spice them with just about anything. My normal equation includes:
Egg
Meat: usually ground sausage, ham is good too
Flavor: Minced garlic, onion, crushed red pepper flakes, S&P
Veggies: Spinach, kale, tomatoes, potato or sweet potato
Cheese
Scramble it all together in a large skillet over medium heat until eggs are just cooked. Scoop into tortillas and wrap up.
To get them freezer ready, wrap the burrito in parchment followed by foil and place in a dated ziplock bag in the freezer.
When you are ready to eat them, remove the foil and parchment wrapping (Note: I save the sheets of foil to reuse.), and heat on a plate in the microwave for two minutes.
Perfect to fuel up on cold winter days!
A note: The Bent Arrow hens are not laying eggs well right now. It’s a combination of colder weather, darker days and the flock reaching an older age. We will have babies this spring and be back in business!
