Thai Pork Lettuce Wraps
 
Ingredients
  • 3 chopped green onions
  • ¼ cup prepared lemongrass
  • 1 tablespoon salt
  • 1 tsp. sugar
  • 1 tsp. lime zest
  • 2 minced garlic cloves
  • 1 pound ground pork
  • 1 tablespoon olive oil
  • Butter or romaine lettuce leaves
  • Matchstick or carrot ribbons, cilantro, lime wedge and kimchi for topping
Instructions
  1. Mix green onions, lemongrass, salt, sugar, lime zest and garlic in a bowl. Add ground pork and mix well.
  2. When combined, heat oil in a skillet and add the pork mixture. Cook until browned. Let rest.
  3. Wash lettuce and use to form cups. Place cooked pork into cups. Top with Kimchi, carrots, cilantro and a splash of lime juice.
