Weekend plans? Pancakes.

 

As a kid, my dad would make pancakes every weekend. It was something my mom’s dad did. And, so when Adam proposed to me, my dad passed on the recipe and a griddle.

 

Pancakes are a staple at our home on the weekend and the kids love getting involved in the cooking process. It’s actually a great toddler recipe and has a small variety of tasks that are perfect for little hands. Our kids love dumping the ingredients, pouring milk, cracking eggs and taking turns mixing it all together.

Almost as much as they love eating the pancakes.


Pancakes
 
Ingredients
  • 1½ cups all-purpose flour
  • 3½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon white sugar
  • 1¼ cups milk
  • 1 egg
  • 3 tablespoons melted butter
Instructions
  1. In a large bowl, mix together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately ¼ cup for each pancake. Brown on both sides and serve hot. Top with syrup or Adam's favorite: Peanut Butter!
