09 May Picnic Chicken Salad
Meals don't get easier and more quick than this chicken salad from a roasted whole chicken.
With the amazing shift in weather, we have been outside a lot. The kids love it so much that they don’t want to come inside.
Like at all.
Not even to eat.
So, picnic dinners it is.
I was caught off guard for our first picnic dinner of the season, thinking we would all head inside so I could cook the planned meal. But, no one was having it. Plus they were having fun.
I ran inside to see what I could find. Thank goodness I had a bowl of shredded chicken from a bird we roasted over the weekend. Protein for the kids was done, and I scrounged a bit to fill the rest of their plate. A well balanced meal was quickly obtained.
Now I had to do something for Adam and me. Time was of the essence with the kids outside so a quick and easy chicken salad was the ticket.
Plus, it’s just so picnic-y.
Pantry staples and some refrigerator items that hat needed to get used up like celery and dill made for a flavorful, light salad on top of some kale.
Now, there are two types of people in the world: Those who like grapes in their chicken salad and those that don’t.
I am of the later opinion. No thanks on the grape. But, it still needs something. Sometimes we go with bacon, but in being quick, I went with sliced almonds. It was so perfect. The right kind of crunch and texture. So good!
- 4 cups shredded chicken
- ½ cup mayo
- 2 tablespoons of lemon juice
- 1 tablespoon dijon mustard
- 1 cup diced celery
- ⅓ cup sliced almonds
- Fresh dill, chopped
- Salt and Pepper
- Lettuce or bread
- Combine all the ingredients in a bowl and mix well. Season to taste. Make into a sandwich or salad.
