14 Nov Sausage and Veggie Sheet Pan Meal
Seasonal one pan meals are perfect for busy nights. Check out this one packed full of fall flavor.
On Halloween, I shared how I am not all that into “hand’s on,” “intricate” meals. I love cooking, but- dang- life sometimes makes it hard. And, cooking is one thing. There is also all the dishes that accompany cooking.
On weeknights (and, let’s be real, many weekends) I like to hit the easy button. Roasting veggies is one way. One pan or pot meals are another.
I have blogged on one pan meals before. This one was with chicken. They are always good because there is something about cooking meat with veggies and herbs letting all the flavors blend. This one pan meal is perfectly fall with brussels sprouts, sweet potatoes and apples. All things that go great with sausage. We used some brats because who said brats are just for the summer?
Good, seasonal flavor. Easy to execute. Clean up was a cinch. Sign. Me. Up!
- 1 pound pork sausage, cut into coins
- 1 sweet potato, diced
- ½ pound brussels sprouts, trimmed and halved
- 1 apple, diced
- ½ red onion, diced
- 3 garlic cloves, minced
- 2 tablespoons olive oil
- Dried herbs like thyme, sage or rosemary (Or all three!)
- salt and pepper
- Fresh parsley, minced, for topping
- Preheat oven to 400 degrees.
- Add veggies, apples and sausage to large sheet pan in a single layer. Drizzle with the olive oil, sprinkle with the dried herbs, season with salt and pepper and toss to coat.
- Place in oven for 15 minutes, toss the entire pan and cook for an additional 15 minutes.
