16 Jul Zucchini Doughnuts
Garden overflowing with Zucchini? Here is what you need to make.
In the summer, we love to get away from the farm from time to time and go to Morse Lake in Noblesville/Cicero. We love spending time on the water.
But, being the entrepreneurs we are, we always get to thinking about how there is a huge opportunity on the lake for a coffee shop. The lake is the best first thing in the morning. So peaceful. A destination for some fuel– not just for the boat– would be great.
The more we get to thinking, this coffee shop (shack actually is what we have in mind…) would have to have doughnuts. Is there anything more “summer,” “no rules,” “it’s the weekend” than doughnuts?
Since we already have one business to care for, the coffee/doughnut shop will have to wait. But, it doesn’t stop us from making doughnuts at home. Like these, packed with garden zucchini.
If your garden is booming with them right now, it’s a great way to get a little creative and try something new! Just don’t forget to grab some eggs at Waddell’s or the farm!
- 2 cups cake flour
- ¾ cup sugar
- ½ cup unsweetened cocoa powder
- 2 tsp. baking powder
- 1 tsp. salt
- 1 cup shredded zucchini, all extra water well squeezed out
- ¾ cup butter milk
- 2 eggs lightly beaten
- 1 tablespoon unsalted butter, melted
- Chocolate Glaze
- 1½ cups powdered sugar
- 4 tablespoons unsweetened cocoa powder
- 2 tsp. vanilla
- 2-3 tablespoons milk

- Preheat oven to 425 degrees.
- Combine flour, sugar, cocoa powder, baking powder and salt in a large bowl.
- Add squeezed zucchini to the dry mixture and toss evenly to coat.
- Add the buttermilk, eggs and melted butter. Stir until just combined.
- Grease donut pan with cooking spray.
- Spoon the batter into the donut pan, filling until just full.
- Bake for 8 minutes or until an inserted toothpick comes out clean.
- Cool in the pan for 5 minutes then transfer to a wire rack.
- Let the donuts cool completely. (I sometimes do over night and then glaze them first thing in the morning.)
- To glaze, dip half of the donut into the glaze.

- Topping with sprinkles is optional, but recommended!
